It’s February, and Target’s had their Valentine’s Day displays up for two months!  This year’s celebration of Cupid is made extra special by that little angel that’s baking in your oven, but trying to come up with a way to celebrate that doesn’t involve champagne or chocolates or rich desserts can be a bit of a challenge.  Not to worry! Here’s a great options for a romantic, possibly even aphrodisiac dish you can serve as a breakfast or dessert. It’s healthy for you, your love AND your baby – and delicious too!

Beets are Good For You and Baby

I call this recipe “My Heart Beets 4U”, which is kind of a play on the old candy hearts we used to give and get in elementary school … you know, the ones with the corny sayings on them.  The ingredients are pretty simple: beets, which are high in folic acid and good for your placenta (and besides having that gorgeous dark fuchsia color, they’re rumored to be an aphrodisiac); fat-free Greek yogurt (high in protein and calcium); walnuts (high in Omega-3 fatty oils, good for baby’s brain); and a touch of honey, which is fine for pregnant mom’s (but not for baby in the first year), and is even said to head of heartburn.   The recipe is as simple as can be.  Just spoon out the plain fat-free Greek yogurt into two pretty bowls, top each with a couple of tablespoons of toasted walnut pieces, drizzle on a little bit of honey, and then comes the part that makes my heart ‘beet’ … take sliced jarred beets (or roast them yourself if you’re feeling industrious, then slice them when cooled), and using a small heart-shaped cookie cutter, cut out the heart shapes and put three or four on each bowl.  If you don’t want the yogurt to start turning pink, don’t put the beets on until you’re ready to serve.  Festive, fun, and it will keep you and baby fit.
